Delicious Birthday Carrot Cake

Hola Ladies!
After a month of crazy changes in our life, due to the arrival of our little angel Norah, I am finally able to better manage my time and publish this post.

Even though Thomas and I are on a diet in order to lose the pregnancy weight (that we both put on…), I wanted to share with you the recipe of a delicious carrot cake I found online on Marmiton. Carrot Cake is one of Thomas`favorites and I really enjoyed making this cake for his last birthday party in November, Thomas and the guests really loved it! I did too 🙂
It became one of my specialties and the gang always asks for more carrot cake!

Ingredients for 8 ppl

75 g butter
250 g sugar
Three eggs
300 g flour
2 teaspoons of baking powder
Half a teaspoon ground cinnamon
150 g yogurt
350 g grated carrots
100 g chopped nuts (walnuts, hazelnuts on Almonds or a mixture of the three)

For the icing
25 g butter
75 g powdered sugar
Half a teaspoon ground cinnamon
150 g cream cheese (mascarpone)

Heat the oven at 190°.
Put the butter (room temperature) with the sugar in a bowl. Mix the two with a fork until you get a homogenous mixture.

Add the eggs one by one. In another bowl, put together the flour, salt, baking powder and the cinnamon and then Add it progressively to the other mixture alternating with the yogurt. Then add the nuts and the carrots.
Put the dough in a mold and put it in the oven. Bake for 40 minutes maximum. Watch the cake as baking time depends on the oven.

While the cake is baking, prepare the icing.
Mix all the ingredients and stir until you get homogenous cream. Keep it in the fridge.

When the cake is done, let it cool. Put the icing on top right before serving.

    Beautiful looking carrot cake Hanin! We’re going to have a cake-off though because Emily and I are convinced we have the best carrot cake recipe (a tweaked version of the cake mom made for us as kids)! We could do it in Milos with the boys as judges – what do you think?

    My next post will probably be an orange cake that is super delicious and that reminded me of the one we had at Roula’s in Milos before our wedding, remember?

      Oh man that orange cake was amazing. Remember when we went back and she’d made a cake that looked the same but had banana in it? I thought Emi was going to throw up. Lol!

    We tasted this when we were in Barcelona and it was very, very good and very different from the carrot cake Em and Beth are talking about. Let the battle begin! Might I volunteer to be a judge?
