(Almost) Guilt free Chocolate Cake

Barcelona, Spain

Hello Ladies!

I hope you are all well!

We just came back from a wonderful week in Herblay where we were able to enjoy Jan and Nigel’s company (it was awesome) as well as some delicious home-cooked meals, interesting TV shows, wonderful discussions and a little bit of French wine 😉 We had a great time and we miss you already. So does the little croqueta!

So this week I have decided to share with you a great recipe for a simple chocolate cake. But this one is special: No butter and hardly any sugar, which makes this recipe one of my favorite because I can eat a delicious chocolate treat without feeling too guilty! I think it is also great for when you have kids over and want to give them something that is not too sweet.

We made this awesome cake for Norah’s 3-month birthday. I can’t believe it was almost 3 months ago. Time flies…

Needless to say mommy and daddy really enjoyed the cake 🙂

Palourde clams with garlic and parsley butter

Belle-Ile-en-Mer, France

Hello Ladies,

I’m back once again in beautiful Belle-Ile in Brittany (lucky me!). The Man and I have been here for the past three weeks making and selling juice, smoothies and popsicles at Juju & Co with our good friends Philippe and Edouard. We are located right on the port and have the pleasure of watching the tide come in and out of the Sauzon harbour. As I mentioned in my post ‘French Toast Topped with Apple and Salted Butter Caramel‘, it’s common for people to go out during low tide and hunt for palourdes clams.

This time I was determined to learn how to catch the little devils, so I packed my yellow rubber boots before heading out to Brittany…

Lunchtime Lentil Stew

Herblay, France

Happy weekend everyone.

Today was one of those days when in spite of it being August I wanted some thing warming and hearty. Maybe that had something to do with the charcoal grey sky, pounding rain and wild gusts of wind. Hope the weather is better where you are.

Lentil stew was just the ticket. It is is super low fat and filling so fits right in with my major diet regime. One pays for all those yummy meals in Milos, you know!

This is what I made today. Continue reading

Bonus Post: Watermelon Cocktails!

Vancouver, July 2014

Hey everyone! The summer here in Vancouver is back ON! And it’s glorious: BBQs, beach parties…. So- this is a bonus post which I will need to update with a photo because embarrassingly we drank all of this before I had the brain wave to take pictures… But believe me- this is the PERFECT summer cocktail! This recipe was invented and graciously shared by Brian Fisher, one of my colleagues.

For one cocktail (We x10 to make a big jug to share):

3 oz Watermelon juice (you may want to use a juicer if making large quantities)
1.5 oz  fresh lime juice
1.5 oz tequilla
.75 oz St. Germaine (Elderflower liqueur)
.75 oz  ginger simple syrup
3 basil leaves

Soda water (optional)

Press the basil into the watermelon and lime juice with a big spoon. Add ice. Add the alcohols and ginger syrup. Strain if you wish to remove any extra basil, pour over ice and add a splash of soda water. Done! Thank me later. And be smart with alcohol- these pack a punch so be careful.

Easy 30 mins Chorizo Rice

Vancouver, July 2014

Work has been keeping me busy ladies! And I’m getting home tired, hungry and totally not in the mood for cooking. So this weekend I searched through all my cookbooks and online for fast recipes I can either prepare ahead of time and/or cook in under 45 mins (and not just omelets!). I adapted this recipe from Donna Hay’s recipe “Cheats Chorizo Paella“. This is super tasty, easy and fast.
