(Almost) Guilt free Chocolate Cake

Barcelona, Spain

Hello Ladies!

I hope you are all well!

We just came back from a wonderful week in Herblay where we were able to enjoy Jan and Nigel’s company (it was awesome) as well as some delicious home-cooked meals, interesting TV shows, wonderful discussions and a little bit of French wine 😉 We had a great time and we miss you already. So does the little croqueta!

So this week I have decided to share with you a great recipe for a simple chocolate cake. But this one is special: No butter and hardly any sugar, which makes this recipe one of my favorite because I can eat a delicious chocolate treat without feeling too guilty! I think it is also great for when you have kids over and want to give them something that is not too sweet.

We made this awesome cake for Norah’s 3-month birthday. I can’t believe it was almost 3 months ago. Time flies…

Needless to say mommy and daddy really enjoyed the cake 🙂

Ingredients for 8 people:

200 gr Chocolate
3 eggs
60 cl powdered milk (i used half a cup of regular milk)
100 gr flour
60 gr sugar
1 bag of vanilla sugar
3 tablespoons water

Pre-heat the oven at 150 degrees
In a bowl, mix the sugar, flour and milk.
Melt the chocolate with the water.
Separate egg white from yolk, and beat the egg white until stiff.
Add the ingredients of the bowl to the chocolate, and then slowly incorporate the egg white. Put everything in a mold and in the oven for 45 minutes (I cooked it less / depends on how you like your cake)

Et voila! Bon appetit!

I’m always appreciative of guilt-free chocolate recipes! I have no doubt that the little one will go nuts for this cake the minute she’s old enough to chew 🙂

Hi there. My calorie check for this recipe came out at two hundred and forty one calories per serving. It really is almost guilt free and sounds yum. My big question re the cake and the guilt is: could I limit myself to just one serving? Hmm, not so sure. As you know, I’m not a big dessert person but chocolate is tough to resist. Oh dear.

Hanin- thank you for this! It’s one of my supervisors’ birthday next week and I needed a super easy cake recipe…AND TA DA! I will be icing it though (he’s a sugar fiend)- I’ll be mixing icing sugar with a bit of vanilla essence and water. I’ll let you know whether or not this was a successful alteration or a little OTT. THANK YOU!!!!! XXXX
