Chicken with Red Pepper

I hope you are all well.

Thomas and I are back on track, after indulging with Norah’s delicious birthday cakes, it was high time we got back on our diets. Still 4 kgs to  lose, but I am happy as I can now wear most of my pre-pregnancy clothes! What an achievement, I am very proud!! 🙂

As I was taking a look at my great light recipes book that Beth got me (Cuisine Légère), I found this recipe and had all the ingredients at home so I decided to give it a try. With Norah sleeping and Thomas at work, I could not go to the supermarket anyway!

This is a very very easy recipe and it tasted quite delicious. I am sure it would be as good on top of your favorite kind of fish Beth!

Ingredients for 4

4 chicken escalopes

1 red pepper

2 garlic cloves

Parsley to taste

2 tbsp olive oil

salt and pepper


Start by preheating your oven at 200 °C.

Place the chicken escalopes in an oven safe dish, add salt and pepper.


Mix together the pepper, garlic and parsley.
I used my super awesome Christmas present from Jan and Nige to do so. Super effective!

Then add the olive oil. Place the mixture on top of the chicken breasts, add 2 tbsp of water if the dish is dry (I didn’t as the red pepper had lots of juice)  and in the oven they go,for 25 minutes.



Serve the chicken with pasta or potatoes.

Voila! So easy and so  delicious, and only 320 calories per serving (for the chicken only – then you have to add the calories ofthe pasta!!)

    Hanin- this looks absolutely delicious! And congrats on losing all the baby weight. Very well done’! I’m going to try and just make the sauce and put in on rice or my new favorite: barley 🙂 Yum!

    Congrats on fitting into your clothes! Soon they’ll be too big and you’ll have to buy new ones… what a tragedy 😉 This sauce certainly sounds delicious and I’m sure it would be wonderful with fish. Do you think it would go well with mussels? I’ve been craving mussels 🙂

    Those cakes were outstanding! You deserved a treat! This reminds me of the sauce I make for scallops-one of Em’s favourites. Just add some lime juice to this and there you go!
