Hydrating anti-heatwave salad

Oh boy is it hot and humid in Vancouver!!!! We’re going to be hitting the 30 degrees Celsius which is extremely uncommon for the west coast even in August. Anyhow. I was a little hungry- but mostly craving fresh, hydrating foods. So with a twist on Hanin’s apéritif- here’s my refreshing salad!


Ingredients (for 2 people):

  • A good chunk of watermelon, cubed, seeds removed
  • 1 small cuke or half a cucumber, cubed
  • 1 cup blueberries
  • 1 tbsp extra virgin olive oil
  • Juice of half a melon
  • Fresh mint
  • Feta (optional)


In a salad bowl, put olive oil and lemon juice and whisk until combined. Throw in watermelon, cucumber and blueberries and toss with the light vinaigrette you’ve just made. Tear up some fresh mint and add with the feta if using.


Feel the refreshment, feel the goodness of summer.

    This picture’s got me drooling! The Man and I are in Luxembourg for a few days and it’s been surprisingly hot. This refreshing salad would have been just the ticket yesterday – it was over 32°C! Will need to try it out when back in Barcelona 🙂
