Sweet Christmas Series: Winter Fruit Salad

It is with great pleasure, and honor, that I close our Christmas Special Series!

As you have probably noticed, some great recipes were shared to satisfy your sweet tooth, each better than the other… Oh my! I am going to have to be careful during the holidays and not ruin all the efforts I have been making over the past few weeks! Haha.

The following recipe is a dessert I once had at my great Aunt’s house (Thank you Amto Sulafa!). I instantly fell in love with the idea, and let me tell you, this dessert will give you lots of energy to fight the winter cold 😉

It is very rich, so I advise you to do it in very small quantities. It can also be served as part of a duo or a trio of little desserts.

I had the chance to test it on Thomas, Beth and The Man a few days ago. It was quite a success! The Man even had extra – he definitely needed the calories for his crazy gym work out!

I have decided to list the ingredients per guest, so you can adapt the recipe.
You can also change the quantities and put more cranberries, less apricots etc, to your taste!

Ingredients per person

4 dried apricots

4 dried figs (to be changed depending on the size of the figs. The ones I used were as big as the apricots, but I know sometimes they are much bigger!)

1 tbsp dried cranberries

1 tbsp raisins

1 tbsp raw almonds

1 tbsp hazelnuts

3-4 pecan nuts

3-4 tbsp apricot juice

A little cinnamon

 

The recipe is very easy. Cut the figs and Apricots, and mix with the rest of the dried fruits.

Put a little apricot juice (eg: when I made it for 4 people I put 1 glass of juice), it has to cover all the fruits.

Add the cinnamon to taste.

Leave to soak for a few hours in the fridge.

Right before serving, place the mix in a small bowl, add the nuts on top.

 

Et voila!

    This was such a lush winter recipe – delicious! I’m becoming an ever bigger fan dried fruits and nuts, so combining the two? Incredible.

    I HIGHLY recommend this recipe to everyone. It gets bonus points in my book for being whole food plant-based!

      And for the first time in a few years, neither do I.
      We are so relieved and so happy too!
