Today I wanted to share a summer recipe with you, because it has been raining for the past week in Barcelona and I wanted to bring a bit of sun and cheers to the table.
I remember our first year in Barcelona, when I wanted to celebrate my birthday on the beach (knowing that in general in Paris we would get ok weather on May 15th)… well…. That didnt happen.
Anyway, this is a salad that I made up, but I was inspired by one of my coach’s recipes (check http://www.thebodycoach.co.uk). It is very easy, really quick, and it can be had either as a starter or as a main course. Also suitable for our vegeterian friends (the ones who still eat fish though 😉)
Ingredients for 4 (main)
- 4 tuna steaks
- 4 eggs
- 1 beautiful lettuce (batavia or laitue beurre / blushed butter oak), but really, this can be replaced with your favorite variety
- 1 jar of pitted green olives
- 4 tomatoes
- Fresh coriander
- 2 avocados
- 1 teaspoon coconut oil
For the vinaigrette: Olive oil, Apple vinegar and mustard.
Start by boiling your eggs. Set them aside once cooked
Cut all the ingredients (Lettuce, avocado, coriander, Tomatoes, olives) and place them in a large bowl. Add the vinaigrette and mix well.
Heat a pan and add the coconut oil. Wait until the pan is really hot and add the steaks. They need to sizzle when added, but they also need to be removed very quickly. Depending on their thickness I would say between 30 sec to 1 mn each side.

Now, place the salad on 4 big plates, add the eggs and tuna on top.
PS: I used to add a bit of green onion to this, but it wasnt great when eaten at work. Feel free to try with or without! 😄
