Tasty apple cinnamon birthday cake

As you know we’ve been pretty busy here! Between work and the peque, we hardly have time to sit and relax, cook and go to the gym… maybe it is also because we have been spending some time having aperos in our little buvette… summer is officially upon us 🙂

Today I wanted to share the recipe of the cake I baked for my last birthday.
It was super simple yet delicious! You can ask Beth, the Man, the buvette waiters as well as my colleagues who, I believe, loved it too 🙂

Ingredients for a big birthday cake:

2 eggs
180 ml oil
1 teaspoon cinnamon
200 gr sugar
250 gr flour
2 tsp baking soda
4 apples
75 gr nuts

 

Mix the eggs, flour, cinnamon, oil and sugar together until you get a smooth dough.

Add the cut apples and the crushed nuts (no pun intended!).

Mix everything and put the mix in a buttered and floured mold.

Bake in the oven at 180° for an hour.

Et voila! All you have to do is blow out the candles and enjoy a delicious birthday cake!

    Yummy! I wish I had that cake for my birthday 🙂 I LOVE cinnamon and apple combo- stunning. I love that you gave some cake to some of the waiters at the buvette 🙂 I’ll be sure to make this cake to bring as a desert for a summer BBQ.

    Hi Hanin, I talked to Beth this morning and she assured me that your cake was a resounding success-moist and delicious. Wish I’d been there. I bet you were a very popular lady at the buvette which for those who don’t know, is an outdoor cafe in the park you go to. But what’s the ‘peque’? Enquiring minds want to know!

      “La peque” is the abbreviation of “La pequeña”, which means “the little one” in Spanish 😉

    This was such a delicious treat! I really appreciated that you swapped out the butter for oil so that I could have some 🙂 Question for you. How should the apples be chopped – what size pieces work best? You mentioned “crushed nuts”, what exactly do you mean by that? Is chopping them ok?
